The consortium producers of Parma, through his manager, has raised the need to modernize the pressing station with a system able to ensure a processing speed of the grapes estimated around 15 tons / h, disposing of an investment badget already secured and no possibility to exceed. In the first analysis, considering that the pneumatic presses were offering large yield quality but with a discontinuous working cycle (time around 3 hours to load / pressing / discharge cycle), we have thus realized a pressing system providing for the combination of a press membrane for the extraction of flower must guaranteeing in this way the maximum quality of the products obtained and a traditional continuous press helix to complete exhaustion of the marc. The combination was made with a steel structure support that through a small tub lung was carrying the grapes partially pressed from the exit of the pneumatic press to the traditional helical press for the depletion. Given the height of the machine, an automatic washing system of ducts has allowed to further accelerate the working operations. With this operation we have obtained that a pneumatic press 80 hl, depending on the different types of grape, charge now about 13/15 ton. grape in 20/25 minutes, extracts must flower in about 30/40 minutes, and download grapes partially pressed in only 5 minutes in the settling tank dosing power to the continuous press. In this way, the actual work cycle was brought to about 13.5 ton / h. With this system, we were able to significantly improve the quality of the product obtained without having to make a lot more expensive investments.
