Coppadoro winery is a society located in Puglia that, thanks to an important investment made some years ago in the area of location, decided to consult highly reputed engineers and architects to elaborate a project for the installing of oenological equipments in the cellar.
The worldwide reputed technical consultant in charge of the project, elaborated a special work proceeding that exalted the quality of grapes and, in the same moment, asked us to plan a specific system suitable for moving grapes reducing at most mechanical solicitations.
We agreed to satisfy their requirements, especially them concerning the reception of grapes, the entire grapes loading, the grape-stalks and grape skins exhaustion, the cryo-maceration on line and the work of grapes in inert atmosphere.
We realized a special reception hopper able to be used either with hand harvested grapes or by machine harvested grapes, supported with a protection bar, screw without supports, draining neck and hydraulic front door with modular controllable opening. The grape-stalks exhaustion has been realized by means of an approaching device and an elevation belt to overcome a gradient of around 5 mt. depth and a 90% inclination in slope.
The exhaustion of used up grape-skins occurred by means of a reception hopper designed to receive
the amount of quantity of a press and to evacuate the product following the contemporaneity of working requested, through a belt elevator and distributor that shared the product on a wagon in accordance with all the security norms.
To load entire grapes on the presses we have realized a belt elevator of 600 mm length, provided with wedges to avoid the phenomenon of clusters’ regurgitation; a distribution belt conveyed the grapes by means of doors at the inside of the press, guaranteeing the maximum quality avoiding mechanical attritions.
The 20 ton/h cryomaceration system on line (Polar system), allowed, finally, to obtain a must richer in aromas and flavours in comparison to the traditional cooling systems; moreover it allowed to work all products in an absolutely oxygen-free environment, maintaining an inert atmosphere during all the phases of working, from the reception to the stockage phases. This innovative method assures a result of very high quality on the final products.
